I had dinner at Fox Brothers BBQ last night with some friends.  It was good.  Really good.

I got the pulled pork and sliced brisket plate.  Both were tasty.  Both were not too heavily flavored, and when sauced, were excellent.  The sauce, BTW, is a perfect balance of sweet, sour and spicy.

For an appetizer, we got "the Tomminator":  A pile of tater tots covered in Brunswick Stew and melted cheese.  It was delicious.

But the whole reason for this post, is the sides.  I got collard greens and mac and cheese.  Honestly, both of them were probably the best I have ever had at any BBQ joint ever.  Seriously.  My only experience with the Brunswick stew was between tots and cheese, but it was also excellent.  Tom got the cole slaw and said it was also excellent.

I'm considering going back and ordering the "4 sides" vegetarian plate.  They're that good.

Oh man, Sam & Dave's is our gold standard of bbq. I love them and I generally am not even much of a bbq fan (mainly because I don't care for bbq sauce). But their mac and cheese is exquisite.

I didn't have heavy cream and used skim milk, eeeek. I thought with all that cheese it would still be fattening enough, and the recipe was delightfully easy, but I think it needs that heavy cream action to be gooey enough.

It was still pretty dang good. And did I say easy?

Did you see that "1,400 calories, 90 grams fat (56 grams saturated)" part? You will not make me feel guilty about trying to make it a little less death-inducing. Plus, like I said, it's still yummy. Sharp cheddar and parmesan, duh.

Have you tried Alton Brown's stovetop Mac and Cheese? It's in my top 3 of all time. It's got a ton of butter, eggs and cheese in it, but I'm betting it is still under 1400 calories a serving.
