I've been meaning to post some of these for a while:
Linguine alla oglio -- linguine with oil and anchovies
This is delicious for those into the salty fishies. Very intense flavor. It makes a good side dish.
1. Heat 1 c olive oil in a small saucepan.
2. Halve 6 cloves of garlic and add to the oil
3. Brown garlic slowly -- don't let it burn.
4. Remove from heat.
5. Add 3 cans flat anchovy fillets and stir until dissolved.
6. Boil 1 box linguine in salted water until al dente.
7. Ladel 6 scoops of hot pasta water into oil/anchovy/garlic mixture then drain linguine and put into serving bowl.
8. Toss with sauce and serve, preferably with garlic bread and wine!
